Scrambled eggs with fresh salsa

Fresh salsa makes this traditional breakfast food better than usual – easy and nourishing. Serve plain, with toast, or wrapped in a flour tortilla. Use the hot salsa if you are looking for something that will wake you up better than a cup of coffee!

INGREDIENTS
2-3 eggs per person
3 tablespoons chopped onions per person
Olive oil
Richie’s California Style Fresh Salsa (fresh red)

PREPARATION
Step 1: Saute chopped onions in olive oil over medium heat. Cook for 5 minutes or until they have softened and are starting to go brown.
Step 2: Whisk together as many eggs as you need and cook over medium heat until scrambled.
Step 3: Plate the eggs with 1/4 cup of the salsa spooned on the side. Serve while still warm.
